    A trial was conducted across four of Whitbread’s kitchen locations using Klipspringer’s Food Oil Monitor. This instrument provides a fast and accurate reading of the Total Polar Compounds (TPC) within the oil, which is an objective indication of the oil quality in the fryers. The unit is pre-configured to display this reading across a red, amber and green scale, ensuring that staff can easily interpret when an oil change is required.
