Improving Sustainability
As one of the largest consumables used in commercial kitchens, Whitbread identified food oil as a key area to target as part of an ongoing commitment to improving sustainability and reducing their carbon footprint. -
The Setup
A trial was conducted across four of Whitbread’s kitchen locations using Klipspringer’s Food Oil Monitor. This instrument provides a fast and accurate reading of the Total Polar Compounds (TPC) within the oil, which is an objective indication of the oil quality in the fryers. The unit is pre-configured to display this reading across a red, amber and green scale, ensuring that staff can easily interpret when an oil change is required. -
The Results
Initial results indicated oil savings of up to 52%, with an average reduction in oil usage of around 30% and a clear case for implementing this technology more widely across the Whitbread estate.Following a co-ordinated roll-out and training programme facilitated by Klipspringer, kitchen staff across every Whitbread location now use the instrument to perform a daily oil check once frying is completed. With several kitchens previously changing their oil prematurely, this has removed the guesswork in oil changes and resulted in significant reductions in oil usage over time.Coupled with this, the project has become a clear win-win for Whitbread by also enhancing the consistency of fried products across all locations, thanks to the food oil condition always being where it needs to be and not left to individual opinion or interpretation.
